NEGROS ORIENTAL (PIA) – Department of Science and Technology (DOST) here recently trained 13 local dairy farmers on the production of ice cream on a stick or “ice drop” in Bayawan City.
The training ushers in skills upgrading, particularly on food processing and entrepreneurship, for members of Bayawan Dairy Farmers Cooperative (BADAFCO).
“The purpose of this activity is to equip members of the cooperative with technical knowledge on the new technology in making ice cream,” said Engr. Gilberto Nakila, a DOST Cebu-based consultant.
DOST also provided the group with two machines through the Grants-in-Aid (GIA) project, which include hot water jacketed pasteurizer and milk hardener.
The machines worth P200,000 are integral in the upgrading of the cooperative’s milk processing technology.
Engr. Nakila explained to members of BADAFCO the step-by-step process in producing delicious ice cream, from equipment maintenance and preparation of raw materials to costing of finished products.
Nakila stressed that proper costing of products is as important as manufacturing them.
